Protein Loaded Sweet Potato Nachos

Searching for a high-protein dinner the whole family will actually eat?
Whether you’re trying to impress guests, fuel your partner, or just whip up a nutritious weeknight meal, these loaded sweet potato nachos are the ultimate crowd-pleaser.
Ingredients:
2 Medium Orange-fleshed Sweet Potatoes
500g Lean Beef Mince
400g Black Beans
50g Shredded Cheddar Cheese (Light)
30ml Sour Cream (Light)
1 tsp Smoked Paprika
1 Large Tomato
1/2 Red Onion
1 Medium Green Chilli Pepper
1/2 Lime (For its Juice)
1 Packet Mingle Taco Seasoning
Method:
Preheat your oven to 180°C (fan-forced). Thinly slice the sweet potatoes and arrange them on a baking tray in a single layer. Coat evenly with olive oil and paprika, then bake for 20–25 minutes until golden and crisp.
While the potatoes bake, brown the beef mince in a pan and stir in the black beans.
Add the taco seasoning and ½ cup of water, allowing it to simmer for 2 minutes.
Once the potatoes are crisp, spread the beef mixture over the top and sprinkle with cheddar cheese. Return the tray to the oven for 5 minutes until the cheese has melted.
While the cheese melts, dice the tomato, green chili, and red onion, then toss with a squeeze of lime juice.
To finish, remove the tray from the oven, add dollops of sour cream, and scatter the fresh salsa over the top.
Serve straight from the tray and enjoy!
